Oryza Sativa - Black (wild) rice - also known as purple rice, is a variety of Oryza Sativa species of rice, some of which are glutinous rice. Black rice is also known as "Forbidden Rice" in ancient China because only upper-class people could afford to eat it. It contains a large amount of anthocyanin polyphenols, hereinafter referred to as ANT, which have a beneficial effect on health due to their antioxidant properties. It has been widely eaten since ancient times in parts of Asia, including present-day Thailand.
